I ran a millwork shop that used copper tubing with soldered fittings throughout. No rust. No leaks. Worked great. Pricey.
I buy long pre-made hoses and cut them to the length needed - often cheaper that buying plain air hose by the foot. Use barbed fittings with SS hose clamps - never had an issue in 35 years.

Years ago i had a bit of welding slag put a pin hole in my air hose with the resultant leak. I cut the line and just used a brass barbed hose connector like this one and I didn't use any clamps. It's held leak free for years now without any problems. The reason I decided to go the no clamp route is because the clamps would have been always hooking on stuff including my hands as I rolled it up and I had some 300 psi working pressure line that I used on a Stock Car that was made to be installed on a barb without any need for a clamps. I decided if that line can hold without clamps, I'd see if an air hose line would too...and it did.

True, no clamps are needed if the barbed fitting is sized properly.
My hose/barbed fitting/clamp setup was used for a shop setup.
If I go for longer hoses on a mobile setup there would be automotive type air fitting.
I am in the building process for my new shop and I will use the pressure hose for this shop also. Metal pipe can add water in the system if used in cold climates and copper tubing, if not drained can corrode leaving debre in the lines.
The rubber hose installs easy, no special tools and one person can put it up.

If using copper pipe it should be brazed/silver soldered.

Sorry, but that is completely unnecessary. You can do it if you want, but simple soldering/sweating is fine. I work in a fortune 500 industrial complex, and all air lines are Copper that are just normally soldered. They do use the blue (type L) copper, so it is thicker than the ultra thin M (red) but other than that, it is just like any plumbing. If it is good enough for this incredibly liability averse company, then it works for me.
