Center of gravity does make a big difference in stability. With a 3 ton load of kerbstones stacked flat over the floor of my deckover, i dont even notice, even though i'm way beyond my legal towing capacity. But loading a 2.5 ton agricultural dumptrailer on tall airplane wheels, it gets tricky, its way more prone to sway.
However, the height difference between a deckover on low profile tires, and a bed between wheels trailer on tall narrow tires, is about six inches. The virtues of dropsides and flat floor, far exceed the marginal loss in stability, IMHO
