I hear your concerns Dave !
I took a good look at the eight pieces of slate that I am going to use and it does not appear that the surface variations will cause too much of a problem. Possibly they might be an issue with a very small base champagne glass, but we do not drink champagne.
The tiles that I am using are 5/16" thick, and 8 5/8" square. So I am planning on in setting 4 slates in a row, and then there will be an oak cross piece, and another 4 slates. Hopefully I will have something to post picture wise in a few days.

BTW, the intent is that I have the slate as close as possible to the surface of the oak top !
