Evolution is not necessarily a process of development from simple to complex. Evolution is a theory of science, not science itself.
It does matter to science if gravity exists because many other theories are based on the existence of gravity, and all known scientists rely on existence of gravity.

You missed my analogy, science doesn't care if gravity exists, science doesn't care if anything exists because science can't care! The definition of science is "to know".
Nothing "matters" to science, things matter to people.
