You're probably right John, and our inner stall doors are built that way. When we decided to go with the dutch doors' smooth side out, we were more concerned with getting them weather-tight as possible. The framing and braces would be a water trap, and having the smooth side out allows us to add battens vertically over the cracks that form as the lumber dries out.
Normally the doors will be open, the only time we close them is if we want to keep them in for some reason, i.e. sick horse or a bad storm. Ours stay out all night and most all winter unless the weather is really bad.
