Anybody try pickled green tomatoes? I tried a recipe I found on the internet and love 'em. I don't can them but make "refrigerator" pickles; I find canned stuff just too mushy to enjoy. Obviously I must store them in the 'fridge, but I just enjoyed my last jar (2012 season) a month or so ago. A good way to store excess production for future enjoyment.
I love refrigerator pickles, but I found out you could use green tomatoes to make salsa verde (green sauce) instead of tomatillos. This year, I'm gonna try to pick all my green tomatoes before frost and make up a big batch of salsa verde and freeze it. My red salsa is great if thawed and eaten right away. You have to add vinegar and/or lemon/lime juice to the mix to keep bacteria under control, but I really like lemon in my salsa and guacamole. Has anyone ever tried freezing their own guacamole? I may try that sometime when avocados are selling cheaply.
