It seems every year I hard boil the Easter eggs (can we say Easter still?) the shells become glued to the stuff on the inside. Since there are so many smart people here, do you have any secrets for making that not happen? Thanks in advance.

I've boiled eggs in salt water, and they peeled easily....haven't done it enough to know if that was what made them peel easy or not. It makes some sense, if you assume osmosis would make the innards shrink. I've heard that older eggs tend to peel easier, too, and I wouldn't be surprised if older eggs had lost some moisture so that the inside separates from the shell. Do you cover the eggs with water, bring to a boil, and then take off the heat? That's Martha's method, I think. I come close to that, but I usually just turn the heat to the minimum and leave the pot on that. Doesn 't make the peels come off easier, but prevents over cooking. I can't wait for the devilled eggs!

The short answer is:

1-2 week old eggs
Start with eggs at room temperature.
Bring to a boil - cover and simmer for about 10 minutes.
Move directly from pot to bowl of ice water until cooled.

Earplug is right...don't use (extremely) fresh eggs...

if you Google "how to hard boil eggs" you will find some very interesting information.

..including how to keep the yolks from turning that funny blue color...

Earplug is right. Fresh eggs are much harder to peel. Aged a couple of week's works for us when we make pickled :licking: eggs.

I always find it amazing when I explain to people I sell eggs to that they will be fresher than what they buy at the supermarket. "Aw, I know a day or two but really, how much fresher..." So I say, hard boil and do a test ;)

I've tried a number of ideas, and have found that peeling them under cold running water works best for me.
