I made 2 dozen deviled eggs for use yesterday. I bought the eggs 10 days before Friday. On Friday I put one dozen at a time into a large pot, covered with just cold tap water, put them on the stove on high heat until the water just started to boil, turned the heat down a bit but still a good vigorous boiling, then set the timer for 10 minutes. When the timer cut off, I took the pot to the sink, and rain cold tap water on them a minute or two, then put a couple of scoops of ice from the icemaker into the water. When they were thoroughly cooled, I dried them with a towel and put them back in the refrigerator. The next day, Saturday, I broke up the shells by tapping them on the sink, peeled them pretty cleanly and easily under running tap water, and made the deviled eggs.
I've seen the recommendation on the Internet to bring the water to a boil, then turn off the heat and let them continue cooking, but I've never tried it. All my life (and that's a lot of years:laughing
