Oil temp in the reservoir is not as hot if the cooler is doing its job but only about 20-25 deg less when the unit is being worked.
Oil temp will vary a great deal depending on if you are mowing on a hard flat surface or weather you are using ground engaging equipment as there is no thermostate in the system. The oil cooler will only drop oil temp so many degree no matter how hot your oil is.
The 100 deg hotter than ambient temp is close guesstamation that has been used by MF, NH, Ford and Oliver that I know of for the 25+ years I have been servicing farm equipment.

Seems to be pretty accurate when tested on some known temp examples. Weather permitting, I plan do some fairly heavy hogging tomorrow afternoon in the near 100 degree heat. Plan to attempt periodic readings on both sides of the cooler and the rear of the tranny case. Will post if successful.
