After completing a 250 hour service I noticed a hydraulic oilleak under the tractor. A discussion with my dealer yielded no help but eventually the leak just stopped!
I tried to refill the oil but the stupid level window is hard to see and difficult to get right (for me anyway!).
I put a gallon in and used the machine for a few hours with no problems until the end when I heard a howling sound!
My question is, how do I determine if I overfilled or under filled the hydro oil tank?

Why do people refer to things as stupid? I don't get that. That window sight glass is there for a reason so use it. Tractor level and maybe a flashlight to observe the fluid level in the view window would be beneficial, unless of course the window is covered with filth, in which case you need to clean it off prior to.

I believe that the correct amount of hydraulic oil is 2.9 gallons.

My sight glass is clean.
I’m just worried about over filling the hydro. I added 1 gal and no change in the glass.
My question is, how can I tell if it’s under filled or over filled? When oil is new and clean it’s hard to tell!

It is hard to see, but the hydro oil does have a slight tinge of color. If you fill it to a degree that you're semi-close, you should be able to see that. If you haven't filled it close to the 2.9 gallons you probably won't see any, as it is under filled to the degree it is not visible in the glass.

The dye might be a good idea. I use Lubrication Engineers Power Fluid 7500 which has a reddish color to it that makes it real easy to see in the sight glass. I have a motorcycle with a sight glass and I once overfilled it due to not being able to tell when the sight glass was empty or full. The excess oil did not stay in the engine when started it and left a huge oil puddle in a parking lot that I spent some time cleaning up. No damage to the engine though and I can't imagine how excess fluid could do any damage to your hydraulic system.
