I have seen home made u-joint boots from leather. Leather, laces tie-raps and grease. As long as it keeps the dirt out it's fine.

New joint will come with a new boot and clamps.
I appreciate the thorough description of the replacement and function of the part. That all made sense.

Looks like the part #6 would need to come off to get to the part to be replaced.

5 is the radial joint but yes, 6 needs to be removed from the outboard casting to remove and replace 5. Don't forget the boots and clips either. The design is pretty much standard across all makes with hydrostat steering.

I'd be cautious about that in as much as sealing a home brew boot would be difficult and the neoprene boots aren't that expensive anyway. They do require disassembly to install but you are gonna replace the radial joint anyway.
