Went to a ball game last night between the St. Lucie Mets and the Palm Beach Cardinals (farm teams of the major league teams) at the field where the NY Mets do their Spring training. The score see-sawed back & forth all evening, but the home team Mets pulled off a 7-6 squeaker in the bottom of the 9th. Great seats, just off to the right behind home plate.

Then, the fireworks! Leaning back in the stadium seats, the bursts filled the sky above us -- close enough that embers were falling in center field. The air pressure from the "booms" could actually be felt. They played my favorite, Sousa's "Stars & Stripes Forever", in the background, running through it 3 complete times before finishing up with "Born in the USA".

Hard to beat it -- baseball and fireworks, jumbo hot dogs, peanuts and beer, on a perfect summer night.

On the actual 4th, it will be some family, some friends, casual pool party and burgers & hotdogs, nothing fancy and nothing planned.

I am going to split up some hickory into smaller sticks and get the ole smoker grill fired up. I'll smoke and barbecue some baby back ribs after doctoring with a rub. I like to get the bbq sauce really sticky and then watch the family lick their fingers after eating the ribs.

Oh, will put a couple whole chickens into the grill... doing the beer can chicken thing. Crispy skin, moist inside...always come out great.

It's a man thing....fire....raw meat..... beer. We are not hard to please. Oh, don't forget blowing up stuff with explosives....er I mean fireworks.

My wife bought one of those beer can holders for the chicken but I haven't tried it yet. Are there any tricks? Will it work well with a propane grill?

Ozarker, I bought two of the beer can holders from Wal-Mart. I've tried just water in the cans, but found beer really did better. There can be all kinds of recipes, but here's what I've found that we like best so far:

Half a can of beer in the can, wash a 4 lb. fryer (4.39 pounds each on the last two), pat dry with paper towels, sprinkle a little salt inside and outside of the chicken, sprinkle a little lemon pepper inside and rub a good bit of the lemon pepper on the outside, then set the chickens down over the cans and place on the grill (we have the 3 burner propane grill). I set an old rectangular cake pan with just a little water under the grate (under the chickens) which covers the two right burners. Then I put wet hickory chips in the "smoker box" that I got at Home Depot and set it on the left burner, turn on the left burner on medium for two hours.

I put 2 fresh hams in the cooker this morning before first light. Two neighbors are already in place to assist in the all day vigil, until dinner is done. They both brought coolers in case mine runs dry sometime this morning. We expect 20 or 30 friends and family for dinner.

The wife, kids and I are going to our first Rodeo out in Arcadia FL today.

After that, I have 4 Rib-Eye Steaks Marinating in the fridge since last night. They are going on the grill (charcoal not gas) and I'm going to pop myself cold one.

We may go see fireworks after that if I have the energy. /forums/images/graemlins/tongue.gif
