A young one would be a smaller one.
As far as eating one how would it be any worse than a rabbit or squirrel? A ground hog is a vegetarian.
I would not eat a racoon or opposum becaude they are basically scavengers.
Have you ever thought about what some of your processed foods have in them,hotdogs etc ? I am sure you probably buy a lot worse foods than a ground hog in the store's etc and not know what you are actually getting. Do you like chicken ? Talk about a dirty animal,those things pick in the poop,maggots, rotten meat etc. KFC seems to sell a lot though.
