Looking back at the people I knew that LOVED Limburger cheese, it was mostly people with German and Austria area family heritage. Maybe it is a taste of the old world.

One guy that would bring it in at work would also bring in great tasting smoked salmon.
LOL. Quite a contrast there....smoked salmon or limburger.

I may have found out why it smells like gym socks.


Like many types of cheeses, limburger gets its recognizable smell from a genus of bacteria — a bacteria necessary to make limburger, but which may turn you off from the cheese for good once you realize where else this bacteria grows. The bacteria in question is brevibacterium linens, according to Gizmodo. This type of bacteria only grows under salty and moist conditions and needs a fair amount of oxygen to survive. The cheese is salty enough to grow the bacteria on its own, but the necessary moisture is provided via the cheesemakers, who regularly wash the cheese as it ages. This on its own isn't that unappetizing. What is, though, is where else you can find brevibacterium linens living — your feet.

Yes, it tastes like gym socks dragged through a backcountry outhouse to me, but go for it. My dad loved it and I can't get far enough away.

I don't eat surströmming either.
The surstromming I never acquired the taste for, as it was not a regular addition to any meals growing up.
But Lutefisk was a regular staple and I will eat it whenever it is served.
Limbuger on rye, with kraut. Yum!

Maybe people with clean smelling feet only smell Limburger while the stinky feet people are the one's that have something to compare it to...their feet. I hope you keep an open mind and try the Limburger. (y)

Lutefisk I had to try as a kid. Gelatinous fish just didn't do it for me. Where I grew up was about 1/2 Norsk and 1/2 Deutsch. I prefer my people's food.

Summit, SD has an annual Lutefisk supper for those who really like it or want to try it. Should be early next month.

I was at a fancy dinner party and one of the hors d'oeuvres was a little sandwich of and in this order...

Saltine cracker
Peanut butter
Mayo
Sharp cheder cheese
tomato based salsa.

I was skeptical but I tried it. It was amazing. It was all everyone could talk about.

I will make it sometimes when the old lady says were having yogurt for dinner.
I eat that quite often while watching tv in the evening....If you don't have any
tomato based salsa, a squirt of catchup will work.

My wife thinks it is gross also, so I don't have to share.

It's good. Can I ask where you learned to make it.

I have not found anyone else that makes it.

Just trying to understand where this came from.

:ROFLMAO: I know what Limburger smells and tastes like; the others... just smelled.
