Middle buster or sub soiler

I want to be able to keep the middle of a 400' long ditch scraped out. I also want to cut a 75' trench through my yard for burying a run of pex pipe to supply water to my shop. I'm thinking 12" under ground will be sufficient for the water pipe. I'm thinking I can also drag up the roots from a couple of bushes that I want to remove from my yard as well. Should I go with a sub soiler considering that it would work best for most of my planned work? Problem is that the sub soiler jobs are going to be one time jobs. Would a sub soiler work for keeping the ditch draining properly too, or would a middle buster be ideal for that? Does anyone make a sub soiler that can have a middle buster plow put on it for the ditch scraping?

I do not garden and do not need to level or smooth out any areas.

Ground work will be done in SE Texas on san augustine grass with no rocks and mostly no roots. Clay can be found about a foot down though.

I think with the Agri-supply sub soiler #73410 you can remove the sub soiler blade and bolt on a middle buster plow blade #36793. I was about to order that combo and would need to call them to confirm. They have a lot of blades so they probably have one that fits if that's not the right one. There's also a pipe layer attachment for the middle buster, #73622.

Our tractor supply had one that could be switched between a subsoiler and muddle buster a while back. the only thing I recall is that it was rather light duty.
I used a subsoiler to run some water line to a garden (don't use in the winter so they didn't need to be too deep) The one I have is about 1" thick steel that is 7" or so wide, 24" in length (or deep) and it works great. Depending on the soil I have had it stop my 50hp in its tracks if to caught something or the clay was just too solid.
