That upside down receiver hitch is an idea I might use... I have a hitch that I could repurpose and have a nice winch mount perhaps..

Ditto. However I bought the weld on one with the round pipe. Now I can pull the pin and stow it. Plans are to buy more of the weld on pipes so I can move it to the back to use as anti-tip downriggers. Of course then I need 2 jacks for the car trailer. My brother has 2 jacks like this on his pickup box trailer so that it won't tip up when loading and it is unhooked.
I like the way the jack on my trailer is mounted. It has a telescoping foot that is spring loaded to retract it so you only have to jack it up enough to release pressure on it when hitching then pull the pin to retract the foot. Reverse order when unhooking so there is less turning of the crank handle. There is no way to hit the tailgate on it, but with center mounting as it is, you would need to offset a winch a bit.
