Fried potatoes with ramps and a country ham sandwich last night for dinner. Pretty good.

Basically a wild onion. They actually have ramp festivals in WVA.

I stumbled across a ramp patch on our farm this past Sunday. Ive seen them here before but never as big of a patch as I found. I like one good meal of them a year and that about all I can stand. Pickled ramps on the other hand are addictive. Try them if you ever get a chance.

I've had them before. A friend of mine used to pickle them. Sadly he has passed.
Do you have the recipe for the pickle?

Ramps have one or two leaves, something like rabbit ears, and are much more pungent.
