I use lock ease. Comes in a small aerosol can and uses graphite in a liquid carrier that dries. It will not attract dirt.

What's a good lubricant for all those external parts that need to be slippery such as 3-pt hitch ball fittings, FEL engagement pins, and such?

I usually just use stray grease, but the best thing going is motorcycle chain lube.

You have two types of people...the greasers and the non-greasers. I am a non-greaser. I don't bother with any kind of lubrication on the ball fittings. I think any kind of lube attracts dirt which causes more wear. Then there's the messy problem of getting the dirty grease on everything when trying to hook up an implement. So that's why I like to keep the ball fittings dry.
