I got the lab reports back on our last harvest and they are OUTSTANDING!
To be Extra Virgin in Europe you must have
0.8 or Less in Acidity
20 parts per something, or less, in Peroxide
We are LOW, LOW, LOW, Yea! 0.1 and 0.2 in acidity.
Low in acidity, very low in peroxide and HIGH in polyphenols.
I pay extra to get the polyphenols tested because I think people want to know that information.
I have read a lot of olive oil research on polyphenols in olive oil and my sense is this.
Anything over 500 is good, that is a good polyphenol content. Anything over 700 is HIGH.
I am including a copy of the lab report with each bottle and tin of olive oil we are sending to Amazon. I slip it in before I wrap it in bubble wrap. I bet people are going to really like seeing a lab report on the exact olive oil they purchased. I will attach the lab reports here, I got he PhD Chemist to give me the lab report in English as well. This is my third year working with her on that, getting her to publish it in English as well. Look for the varietal of olive on the lab report, I circled it.
