Bird if you ever ate King Fish caught in the gulf it was mackerel. I don't care for it either but lots of people do. Speckled trout makes me drool. I wish i had just a few of the fish I caught at Aransas Pass ,the Army Hole and Sea Drift.

Jim, I forgot about that. I never caught any King Fish myself, but I did eat some many years ago; not too bad, but certainly not my choice either.:D And yes, the speckled trout (weakfish to you folks on the east coast) are one of the very popular game fish, and with good reason.

If the Kings are prepared properly, they are really good to eat. They have to bleed out immediately after being caught...literally the King's heart should pump all the blood out....then make vertical slices down one side of the fish about two inches apart...then pop out the balls of meat. Excellent eating...and what is left of the fish isn't good to eat anyway.

My bro-inlaw used to make pickled herring from salted fish imported from somewhere-Iceland I think. He is now deceased and I haven't had any in years-it was good stuff.
Out of curiosity I looked on Google and found a zillion recipe sites for it.
Nothing like pickled herring, Ritz crackers, beer and a good football game.

Fried it up last night for supper... was't impressed... too many small bones! Next time i'll stick with Gordons fish sticks!

meadowlarkponds, I guess you know that it's best to cut the sheepshead throats and let them bleed out before filleting, too.

Knotbored, I've been trying to remember whether I've ever eaten any pickled fish, and don't think I have. I've eaten pickled pigs feet, but not in the last 50 years, and I've eaten pickled (hard boiled) eggs, but not for many years, but no fish that I remember.

And mjarrels, we're really hard up for fish when we eat those fish sticks.:D

That looks really good, John. Of course, you went a little farther out than I have ever gone.:D For many years, my parents lived at Port Aransas and we went to spend the week of Thanksgiving with them every year for about 17 years, then after I retired, I spent a little more time down there; even considered buying a house there at one time. But we always fished from the piers and jetties, or in the bay in small boats. I've been down there and seen the party boats come in at times with a lot of fish; just never went out with them.

I used to have, and use, a canoe, but have never tried a kayak.:D But I think, at my age, I'll stay with something a little more stable.
