Get a weber with cast alum top and bottom shells, or you'll be replacing it again in another 3-4 years. I finally bit the bullet and spent a little more 3 years ago and very glad I did.
As for the griddle situation, I'd cook on an insert if it were me. But I don't sleep with your wife, you do! :shocked:
ss burners rust out. cast iron burners and grills are the way to go!.. >lifetime..Got a weber q which uses very little gas and recently got a ziegler brown which I find more efficient and can run hotter, don't know if you can get them in USA.
Been tnhrough the big gas burners and found the compact Q would do everthing they could at less fuel cost and being alloy with ss burners no rusting out, easy to clean too with disposable drip tray.
