Hi everybody,
We built a new -heated- workshop, nice! But it is much warmer at the ceiling and mezzanine than on the floor.
I guess it needs some kind of fan Trying to find out a way to turn it on as needed. It seems a bit much to let it run all the time.
Compare top and bottom temperatures?
Also, what kind of fan would work best? (Yes, we forgot about including one.) Shop is about 16 feet tall.

We just built my bil a 30x40 shop with 10 ft sidewalls and vaulted ceiling. We installed two commercial 70 inch three speed ceiling fans from Menards during build. Maybe you can retrofit fans to ceiling with surface mount conduit? If that's not possible maybe a large stand fan aimed up towards ceiling?

From harbor freight $159 it telescopes to 6 ft and tilts to 70 degrees.

We heat our house with wood. The wood burner is in the basement. I have ductwork with a fan installed that moves warm air from above the wood stove up through the ducts to the 1st floor. I installed a portable greenhouse thermostat on the ceiling in the basement, and wired it to cool the room. When the basement room with the wood burner gets to 78 degrees, the fan comes on and moves the air upstairs. When the fire goes out and the room cools below 76, the fan turns off.

The thermostat can be wired to heat OR cool. That is the nice feature.

You could install a ceiling fan in your high roof, and install the portable greenhouse thermostat at about 52" from the floor. Plug the fan into the thermostat. Wire it to heat the room. Set it to 70. If the temp at the thermostat drops below 70, it'll turn on the ceiling fan and move the warm air down and around until the temp gets to 70 at the thermostat. Then it'll shut the fan off.

It's about $60.

I installed a large $20 used ceiling fan in my shop and leave it running 24/7 all year at low speed, mainly for moisture control in our case.

I measured the power usage and it's low enough at low speed to not matter much.

It's own wiring & 3-speed wall switch make easy control access.

We are almost done with our 40x30x16 shop. Fans up high with motion sensor switches. Final electrical is all that is left. Should be wrapped up next week. I'm not sure what brand of fan, left it to the contractor on that.

Wife had big ass fans added in the warehouse of a small factory she managed. Too pricey for our use, but if you have the money, highly recommend.

The others covered this well so the only other thing I would add is that ceiling fans use basically nothing for electricity, so even if you ran them on low 24/7 it won't amount to much.
