Im not sure on the cut, Kathleen buys them, I just call it a rack of pork ribs... Ill ask and get back to you..... sooo good !

BTW: I used to be a bartender in my US Navy days. A favorite drink at my bar (after I mixed a few for some pretty ladies) was a Jack Rose. That's apple jack brandy, Roses lime juice, and a dash of grenadine for a nice rose color. You can use regular lime juice, but you'll need to add simple syrup (sugar water) to make it sweet. It's good served both chilled and warm.

Your allways with the astute eye my friend, I have posted too many pictures... that is a Ct wood pile.... but my heart was in Vt while I was running the smoker !
