Don ... My understanding is that some nitrates come from the curing process of bacon ... Our body itself produces them.. . I also understand that our own saliva has more nitrates and we take in nitrates every time we sallow. A lot of different controversy on the subject .. As Forest said ... That's all I got to say about that !!


Nitrites/nitrates themselves are not bad -as you say, they are in saliva and plants along with bacon. The problem is when the nitrites turn into nitrosamines. The nitrosamines cause the cancers. No controversy yet.

Vegetables and plants block the formation of their nitrites into nitrosamines. No controversy yet.

Nitrites form into Nitrosamines in the meat. Still no controversy.

Nitrosamines in the body are better than botulism from meat. Here is the controversy. Cancer risk is better than quick death. Some say yes some say neither.

As you continue your learning curve find out why 550ppm of ascorbic acid, or erythorbic acid (an isomer of ascorbic acid) rather than ascorbic acid.is also added to the bacon curing process.

After walking through the school's lunch line and stuffing his plate and face,
John Belushi sits in a booth and asks a handsome couple, what am I (whilst placing a hard boiled egg in his mouth)?
They didn't get it, and he slaps his cheeks hard squirting out hard boiled egg on them yelling "I'm a zit, get it?"
The guy gets mad and Belushi throws his food and screams out,

Ok Ron I checked it out and found out that Phytonutrients such as vitamin C prevent the formation of nitrosamines from nitrites, which explains why adding nitrite preservatives to processed meat can be harmful, but adding more vegetables and their nitrite-forming nitrates to our diet can be helpful.

Make sure your all natural bacon has lots of erythorbic acid (a preservative, I guess) All Natural? Looks like we just took another step away but it does make bacon safer. Hey, while I was researching that I found that 4 hotdogs have more nitrosamines, since we are on the subject of nitrosamines, than 20 cigarettes. Don't tell my mom she would never let me smoke but fed me plenty of hot dogs.

A classic Kyle and please be sure to only throw only veggies at me!!! I have had my fill of nitrosamines and am living on borrowed time. :D

I already found your 14 year old first article in which I figured out that that stuff is added to offset the dangers of nitrites. See my previous post I guess we were both posting. The 4th article still talks about the nitrites in plants - we have already covered that - they don't turn to nitrosamines. All this stuff that has to be added to all natural meat to make it safe is really an incentive to stay plant based don't you think. No coffee tonight I'll review them the next couple of days. So what is your summary?

Wow, You have a year more college in nutrition than I do. In the last three years I have attend about a dozen seminars where registered dietitians and physicians lectured. Since none of the seminars were sponsored by pharmaceutical companies or the meat and dairy industry you can probably guess what type of diet they discussed that created a lot of interest. Herbivore. Omnivores don't naturally look into a Herbivore diet unless they feel an ethical reason or health reason to do so. I know if I did not have heart disease I would not be a Herbivore. Omnivores are not into prevention, no need unless you get sick. I haven't found out why Omnivores feel very defensive of their diet like the Herbivores are going to steal their meat. I can see Omnivores being threatened by the "ethic" Herbivores because of the hunting issue, but with only 3% of the population being Herbivore (and more than half for health reasons that don't care) what kind of threat can they be?

Looks like another hot day in Texas, all domestic animals are accounted for this morning so the Omnivores did not get a pet meal last night.:D
