It's pretty easy to get most of the liquid fill in tires out of the tire. What little tips or tricks have you used to get the last little bit of liquid out once the level has dropped to the level of the valve stem? Break the bead? Any other bright ideas?

I was going to stick some small plastic tubing down the valve stem hole and suck the remaining liquid out with either a siphon or vacuum. I'm trying not to break the bead since this set of tire is a bear to get the bead seated again.

Sounds good. If you get the right size (not sure what that is), you should be able to air the tire up without the core in the stem, insert tubing 'till it hits the bottom of tire, and the pressure left inside the tire should blow the remaining fluid out except for a very small amount (few spoonfuls).

Blow some air in, then stick in a small rigid tube that will just fit thru the valve. With the valve on the bottom the fluid will spurt up the tube. Attach a hose to direct it where you want.

KPark,
That looks like Giant Mt. in your profile! I hiked that with my Dad when he was alive. He hiked many of the high peaks in Keene Valley up to his early 80's. Where do you find flat or rolling land in that area to run your tractor?
