That is a good question. Here is a copy of the manual:
On page 30 it says "If you notice wear or rounding on the inner edge of the anvil, sharpen the anvil so the original angles are retained."
In the section diagram on that page, it looks like the anvil is a beveled piece of steel but it's hard to read. Might make more sense if we could see a picture of the actual piece.
But it looks like it is sharpened at an angle.
