All chips, french fries, ice-cream, cakes, pies, candy bars - all all "vegetarian" and there are many overweight un-healthy vegetarians. Their triglycerides are high and their liver is converting that into cholesterol.

Now add plant-based only & no added fat or oils and everything in the approved vegetarian list above is eliminated.

A "vegetarian diet" (and dairy and cheese is allow on a vegetarian diet) is mostly people who care about the health of animals first.

There ya go Don, you are exactly right...the fellow told me he had a problem with deserts..LOL...He probably had a chip and candy problem too..

I'm also concerned about getting enough protein & B vitamins.

Vitamin B12 is the only vitamin that needs to be a supplemented. If you had enough organic veggies that use manure as fertilizer you might not need it. But year round assortment of veggies from the store and one or two B12 tablets a week is easier.

Protein. The average adult needs between 56-60 grams a day. I counted mine for several days and easily achieved that. A few examples: Black beans at 15.2 grams, lentils 17.9, quinoa 11.0, broccoli 4.6, oatmeal 10, no-fat soy milk 6, etc......

If you add a few nuts and seeds and nuts (that I can't eat) you can easily go over that even on just a plant-based diet only.

Don, if you get a few moments, I'd sure appreciate seeing a complete list of what all you eat.

When I get home after work, & my lady's not there to steer me to something better (my bad excuse, but I want to fight it nonetheless), & it's snack time, that's my weakest time of the day by far. If I could remove all the bad foods (chips) from the kitchen & replace it with vegan everything, that's what I'd prefer to do ... so I have no unhealthy foods/ snacks tempting me.

I don't cook at all (& definitely don't care to). In some ways that prob doesn't help my desire to eat healthy (cause I wanna just grab quick snacks). In other ways, maybe it does help (some (most?) cooks like to add in bad stuff for flavor!)

Edit: I did go back & see your list ... Is it complete? Anything you can add or clarify, or recommend for flavor?!

Quick summary of foods allowed:
All vegetables - for those with heart disease no avocados
Legumes - Beans, peas, lentils etc...
Whole grains - includes whole grain pastas, made without eggs.
Fruits- limit to three pieces (or handfulls) a day.
Beverages - oat milk, no-fat soy milk, alcohol in moderation, coffee, tea, seltzer water.

TMR ,

"
....My cholesterol has always been pretty much OK but my Doc has me taking a 10mg. Lipitor tab each night...She said it has other benefits...did not go into detail but she said if I did not want to take it that would be fine but she would prefer I take it for the added benefits...You know how these Dr. appts. go...in and out and my wife..asked me...What benefits...I said.." Duh " made me feel foolish...so next time I see her, the Doc. I will ask what the added benefit is....if I remember to ask or am not hurried out...that is...LOL

I hope the "other" benefits exceed the side effects. Hopefully with a low dose they will be minimized.

Whenever we take our Cholesterol Test it is the level of cholesterol in our blood after fasting for 10-12 hours. When we eat fatty food or carbohydrates our LDL blood levels increases for up to 8 hours before it levels back down. If we eat 3 SAD meals in a row our cholesterol is increased almost 20 hours a day. (SAD=Standard American Diet)

Statins only reduce the cholesterol our liver produces, it does not reduce the cholesterol we eat which is found in all animal products.

I wonder if she prescribed for those peak periods and if you told her you ate plant based only if she would have not prescribed?

I took statins for years and still had a heart attack. I was not on a plant based diet all those years. I believe those un-tested 20 hours (non-fasting) came close to killing me.

edit: beepington I have to run to the Fire Station for a state inspection. I will start on food later!

beepington, the fire truck passed inspection and the grant money will be sent to us, yea!

I thought about your post when I got home and I told my wife (with a broken foot) to stay on the couch and I whip something up. I took some photos along the way on this 15 minute meal. I usually also have a grain like brown rice but I forgot.

By the way this is not original I got the idea from a cooking demonstration by Jeff Novack.

You can get any combination of of veggies and base sauces but tonight fresh frozen greens and vegetable were on my menu with a tomato base. Here is a picture of the ingredients (the only cutting required was opening the bags:D) in the bowls are left over corn and brussels sprouts.

And the finished meal in 15 minutes looked like this on the plate. The white salad dressing on the salad is a water, vinegar, and spices no fat onion dressing. I also like to use a no-fat Balsamic Glaze on greens. The vinegar really mask the green taste that I'm trying to get use to but it may take a while. These are also in the second pic.

Just grabbing some of the no added oil item from the pantry and the fridge to let you know they are available. On the lower left is Nacho Mom's Queso. It's great on cut up microwaved to crispness corn tortillas (no- fat). The queso is fat free and made with nutritional yeast, rice flour, tomatoes and other spices and is made in Austin Texas! You may be wondering about the carmel corn rice cakes but they are also fat free and whole grain. (ok they might have a little sugar but I can burn that off quickly)

The tempeh is also fat free, I just found it yesterday and will try it soon.

One snack I have at night sometimes, is the same as breakfast, a bowl of oatmeal with fruit, (frozen mangos and blueberries) very filling and satisfying.

I'm always looking for new things and modifying and tweaking my diet.

A good recipe web page is: Fatfree Vegan Recipes

OK, Don, that's great, thank you!

Do you get hungry quicker after a meal like that, which might seem to lack "bulk"? Or feel like you need to eat again sooner than you used to? Or does it just do the trick?!
