Our code is double 5/8 between garage and house.
Our church building has a double 1" sheetrock wall from slab to roof, to create 2 fire zones.
Love the woodwork.

On the sheetrock issue above the T&G, I ask the builder about it. It is not needed for fire code in Idaho, but for the reason's I mentioned in a previous post.

Does your phone camera have panorama view mode? My android does.
House looking good. I think drywall above the T&G is smart.

The builder said he has not always sheet rocked above T&G. Some of the wood with knots allows the insulation to fall down at times so that is the main reason he does it now.
I am using a Nikon point & shoot camera. Takes good pictures/videos especially when it's freezing temps while riding the sled.

I love those doors! And I like the door molding framing style. Simple, rustic, but still very finished. Nice choice!

Thank you. The main reason I'm asking is that I'm going to add on to my house and do a similar ceiling, but I'm planning on using foam for the insulation to get the highest R value that I can in the smallest amount of space. I was not planning on using sheetrock on the ceiling, so now I'll have to think about that, and if it's something that I want to do or not.

Something to think about is what the installer told me. Without drywall you waste lots of wood by needing to make sure you can nail the ends of T&G to a truss, if you are an inch short then you waste almost 2' of wood. With drywall they used the whole piece of wood other than cutting off a 1/4 inch to make sure they had straight ends.

Good point. My plan is to have open beam trusses with just under 12 feet of ceiling between them, so every piece of T&G will fit in between the trusses. My main thought right now is if there is a real advantage adding sheetrock in case of a fire? Roof will be metal and the joists will be 2x12's, which will be filled by close cell foam. Then covered up by the T&G pine.
