We indeed had bbq salmon off the PK. Here is a quick rundown of the operation.

Started with a tumbleweed on my mini weber with Royal Oak lump charcoal in a chimney. Been trying those and the Weber wax lighter cubes and think I am liking the cubes better (more bang for the buck). Both do a good job lighting coals.

Once hot, I dumped it into a charcoal basket (don't have to) but with the PK you have access to one side without having to remove the grill. Then it can be slid to the center if you don't need to spread them. I used a water soaked (I've heard of using white wine as well) cedar plank and placed the fillet and board directly over the hot pile of coals.

No pics but bbq'd a couple of ribeye cap (lip) steaks last night from Costco. These come in 3 packs or 4 packs and are huge. My better half cuts the string deconstructs them and makes 6 smaller steaks and reties them. Quite fatty/rich but we love them. Used the optional grill grate again. So dang good on 'real' lump charcoal!

Tonight... yep another bbq. With the great weather and a new toy, I have been cooking every night outside. I'm getting brownie points as well taking some load off my wife. Just started the coals and we will be having marinated chicken legs and spot prawns (that we caught in the spring). Will throw some 'zoodles' on for a bit as well. Zucchini thin spaghetti style mixed with mushrooms, onions, and peppers from the garden.

Here is a pano picture of my newly configured bbq area. We found a deck box at HF on sale and put it together today. It stores all my bbq and smoking stuff including a small shop vac. Gonna do indirect cooking tonight.

Looks pretty tasty dragon! Another good lump brand I've recently used is FOGO. You do have to bust it up a little though as there are some "logs" in the bag.
NO KIDDING! I was at an ACE hardware store yesterday and scored some FOGO and also some B&B 'championship' lump. Did some side by side grilling with my SIL last night. We agreed we liked the FOGO smoke smell a little better. I will have to take a hatchet to some of the pieces but the good news so far in the bags, I am not seeing the little shavings/splinter pieces like in the Royal Oak. Both much better in chunks and smell vs. the Royal Oak. However the negative on the FOGO... it sparked like crazy until it got hot while the B&B didn't crackle at all.

I've got three grills, first that I ever owned is a PK Grill. Original style. I love it, though I haven't used it in a little while. I gotta get some new grates for it, they're about toast at this point. I've put a LOT of charcoal through that sucker. One of these days I've gotta either make a new set of grates for it or just pony up and buy 'em. I got mine for free from some rich people that moved out on my parents' street probably 10-15yrs ago. They left it at the curb! I didn't even know what I had when I snagged it for scrap weight. Did some research, cleaned it up, used it exclusively for 10-11yrs.

Second is my Grilla Silverbac pellet smoker. Like your Traeger, it's set-it and forget-it, which works well with my current lifestyle. My wife and I are in and out a lot with our dog, hiking, walking, whatever. It's nice to throw an 8lb Boston Butt on the Silverbac and go on a nice long hike, come home, pull it, wrap, drop in a cooler, shower, set up for dinner and eat. Minimal work, makes great BBQ.

And I've got a Coleman gasser, don't remember the model, it's unremarkable but has an aluminum tub so it just might last forever.

Edit: dragon- I've also been using GrillGrates on my gas grill for years- try them on your Traeger, you'll get some heat out of them. ;)

Last night I used the optional Grill Grates and cooked up some bulgogi (Korean thin sliced marinated beef). Bulgogi means 'fire meat'. Oh boy... it was so dam good! :licking:

Do yourself a favor and find it at Costco already marinated and ready to grill, and try it! Note that you will need a grill grate or some other type of grilling dish that won't let the thin and small pieces of meat fall through the standard grate on most BBQs. It is imperative that you get the searing marks on the meat. You all will be thanking me after you try it.

Edit: Last night was so good we are doing a repeat tonight for my wife's birthday dinner!

More good good cooking... BBQing 3 to 4 times a week. Last night cedar planked salmon with vegetables all from the garden.

Sweetie bought me a Big Green Egg for Christmas a couple of years ago. First time for me using charcoal. I've been cooking everything that I can on it ever since! I also have a propane grill (American made MHP brand!) and a 36" Blackstone griddle. My back deck is the primary cooking place. Fortunately the kitchen doors open right to the deck so it's easy access.

Glad you're loving your new PK Grill!
