120v submersible pump for a 2" well casing

There you go! There are lots of brands of deep well or convertible jet pumps that will work on 115V. You will need a packer assemble to put on the bottom of the pipe and a 2" casing adapter for the pump to fit the pipe. The Goulds J5 gives good pressure from deep wells and will do about 7.5 GPM.

I'd check into a DC pump like they use with solar panels. Might come in a smaller size. Then just get an reverse inverter to change from AC to the DC needed.

A "pitcher pump" will not even come close to sucking water up from 53'.

There are manual pumps that will pump down to 100'.

That would be a deep well rod pump (manual).

$2000 for a hand pump, that's crazy! I called a local well company today, they sell a deep well jet pump and all the needed parts for ~$1100. Thanks for all the info!

$1100 for a jet-pump setup? That sounds ridiculously high. Read up on what all is required and do it yourself. Not a difficult task.

A Gould/s J5 convertible jet pump can be bought for under $500.
Other parts/fittings are necessary, but total would still be well under $1,000.
