Crawfish are much better than shrimp! Find a place that makes good jambalaya,etouffee or even better find them boiled, pinch the tail,suck the head!

Crawfish aren't tough at all, very tender, and good! If you go west on I-10, exit at Henderson, LA and eat at Pat's. Right on a bayou, real Cajun food in Cajun country.

ok, I'll make sure I get crawfish, and I'll get pics...

since this is a quiet day for me, I made a nice breakfast. Cooked some bacon slowly and then made some pancakes. Buttermilk and honey pancakes, just add water. And boy did that batter smell good, like a chocolate cake batter but honey sweet. Yum. And apparently organic or sure not much added which is good. Hey, with the proverbial milk and honey in there, what else could one want?... And no added sugars, corn syrup or preservatives at all. Glad I brought a couple boxes. Quick to make, the bacon is what took time. I should just micro that inside a wad of paper towels.

now happily full, I am off to the campground store to find a trinket or post card. And to find a spot near the lake to sit and read a paperback. Getting to the end of some Nora Roberts vampire trilogy, and I kinda want to get it done to try something else. But of course, the good guys have to win first. And despite overwhelming odds against the thousands of blood thirsty vampires, well, that's in the next chapter. Supposed to be 87 and cloudy here. Bad weather coming in again in a few days but not today.

Not only a tractor picture but one with a very happy lady operating it, as well as one with fine legs (now who does this remind you of?...)who looked like she was outworking the guys around her two to one. And they were having fun building that outdoor stage.

Crawfish = freshwater lobsters, or mudbugs.
We went to the Brownsville Shrimp Basin this winter. Bought some wild shrimp caught in the Gulf of Mexico. Big difference in this shrimp compared to what you get at most stores and restaurants. Learned to ask where a restaurant gets their shrimp from. Also learned there is no such thing as fresh shrimp. They are flash frozen within minutes after being brought up from the bottom of the Gulf.

crawfish, my favorite over shrimp, or crab or any fish...I like them fried...much more tender than shrimp...please, please eat some for me every time you have a chance...experiment with various sauces and just cooked naked...so good any way!!!
