Doxy, forgetting your parking brake was set is pretty common. If it were me, i'd adjust the brake rods so the brakes are snug like new again and not worry about it. Next time you'll remember.

It was just a "given" that if you smelled someones brakes, you could bet it wouldn't be long before their truck was in the bone yard getting tore down by the mechanics.

It sounds like all the fluid got cooked until it started to break down (brake
down?). There were 100s of hp and possibly high speeds involved there.
It is hard to imagine that a 30 or 40 hp tractor could cook 10 gallons of
hyd fluid. Possible, I suppose. Cooked fluid loses its lubrication properties.

dfkrug, good point on the oil breaking down at hight temps. I'll check with some of the more in the know maechanics to see what their thoughts are on the cause of the failure. Oil breaking down at high temp or brake lining material getting through the hyd filters. Your theory is probably correct.
