There is something you are not considering, and that is, that I believe those hyd motors were selected to run at about 1400 rpm. If he now doubles the pump flow through the three motors, the rpm will about double to about 2800 rpm. I think the final outcome will be blown motors, whereas the motors could could be used in another project while they are intact and food. . I believe I would select hyd motors for the flow that you have that will give the torque required.
I have suggested a flow control valve to limit the flow. That is what I use on my PTO circuit for any of the hyd implement I use. Auger, tiler, etc.
If the one motor test mower were to stall, the motor relief would limit the pressure to 1500 psi.
