Regarding the foot pedals being touchy: Give yourself several hours of seat time before modification. I had the same problem as you. It did not take too long to get used to the pedal's sensitivity.
I bent the pedal on the reverse side, from a V shape to more flat on the left. It helped limit overall reverse speed, but still spins the front tires from a quick rise in torque. Maybe someday I will take the time to decrease the orfice for the line restriction.Very possible!
I had the wife run it for a bit, scooping up dirt on an uphill grade, then move it across the hillside and dump on downhill grade. She too was a bit nervous with the pedals—especially reversing.
I’ve found that reversing uphill is worse too, mainly in rough ground. (rough as in washboard-type surface or similar, or basically not flat yet) To me, it’s like a little “hump” in the pedal that goes from slow to fast immediately, no matter how I’ve tried to manipulate it. A lower throttle does help, but can kill it easily too with a little resistance. But I’ll give it some time. I did think about possibly putting some kind of “limiting block” underneath the reverse side, to keep it from getting away with us…
