Well I got censored for something I posted,, If I offended anyone on the Texas winter/spring,, I do apologize,, my intend was not to upset anyone but bring a smile to your face,,
So this will be my last post,,
I have decided to remove any and all post I have posted..
I will not write where someone else decide what I should be writing or posting..

Refrigerated, kept in the meat market display that the stores all had before they went to pre-packaged meats. Of course that chili had a good bit of grease in it, which was what held the blocks together. But I remember it as tasting better than any of the modern day canned chili.

Bird, I remember those and I'm not that old?? May have been the "local". We lived in the Hills of the Ozark mountains through much of my youth, so maybe things where 50 years late changing:confused3: Fact, I remember several items came in "packaged "blocks"??

BTW, Haven't had very much more moisture (rain) since Friday, but it has been constantly moist. I see we have some moving in from the West of me now, already Ice on the deck. Monday morning will be "eventful" when them city folks hit the roads.

These are the days I dont miss Law enforcement:laughing:

I don't know, Dennis. Sometimes it used to be fun, out in the squad car, watching the people trying to drive on ice and/or snow; more entertaining and better than going to the circus.:laughing:

But then you had to get out of the warm vehicle when they hit something. Then you had to dodge the other idiots from other parts of the country that said "I know how to drive on snow" and were spinning out. I would politely explained that in Texas it's called ice :duh: and obviously they couldn't drive on it. :D

Your right Bird, but the paper work!! UGGGG. I loved it when Texas started using the "blue form" for accidents on private property, it is amazing how many people hit each other just going to a grocery store:confused3: I did not enjoy working the fatalities and in this weather it was even more distasteful.

I'm like Jim, love potatoes. They add bulk to the chili and pick up a great flavor from the other components.

Surely, you are not talking about this Jim. I cannot imagine potatoes in chili.:p As a matter of fact, I come down on the "no beans" side of the argument. I can eat chili with beans okay, but really prefer the good stuff without beans.

FG, you said you use course ground chuck. We used to buy chili meat when I was a kid that almost looked like marble sized pieces. It was just called chili grind at the store. I'm sure there are stores that still have it, but you probably won't find it in most stores. My mother never used ground meat in chili.

Back in the late '90s when Braums started selling chili, it was one of my favorite places to go get a quick bowl. I don't know if it came canned to the store in Grand Prairie, but the manager there added fresh ingredients so it tasted homemade. I thought all Braums stores were that way and stopped in another location for chili one day. What a disappointment! It was a greasy, slimy, heartburn inducing mush.:(

Back when I was working in aviation training, our company had a halloween departmental costume contest and themed chili cookoff. Of course, we invited all our clients to come and they were the judges. One fellow who was the facilities supervisor would win every year he entered. His chili was head and shoulders above everyone else. Of course, he guarded his recipe closely. His was some of the best chili I ever put in my mouth, much better than any I ever made.

I have to use a big stock pot on the stove top when making chili, soups, stews or gumbo. I usually make a 12 quart pot full, sometimes, even larger. I think things like that are much better the second day, and flavor improves aver the next several days. It is wonderful and easy to come home from work, ladle some into a pan and heat it on low. Instant goodness! I also simmer my goods on the stove top all day. I use the crock pot, and love it, but more for things like roasts. I have one soup recipe that I like, that cooks in the crock-pot, and that is a taco soup.

I much prefer the old freezers to the new "energy efficient" models. Old ones would get your ice cream cold and keep it frozen. The newer models don't do that. I have an older chest type, as well as an old upright. I too defrost them, usually twice a year, before adding a hog in the Spring, and the beef in the late Fall. That way, I can inventory what is there, and store the garden harvest. Whatever i have extra on the veggie dept. of, going into late winter, is what goes into the soups that I make! I use the freezer on the side by side for things like over ripe bananas, or dog food that has already been cooked and put up. Those things won't be in there long enough to go through very many defrost cycles. I use the bananas to make Banana Nut Bread.

And you know, if you make a big pot of soup or chili, it can stretch the food budget like some would never believe! I can eat like royalty, including cooking prime rib for Thanksgiving, and still don't spend $50/month, on groceries, on average! Try eating out on less than $50/mo! (I know. Apologies to the purists, but I really don't like turkey, and so it goes to the dogs, and I eat prime rib!)

jinman; Texas chili doesn't have beans! We have meat, so don't need the filler! I like beans, just a bowl of them and some cornbread, but like you, not in my chili!

It started with a rain/sleet mix this morning at 7:15 AM. The outside temperature was 29 F and it still is now. It's sleeted slowly on and off all morning and my deck that melted off clean yesterday is now covered with a layer of sleet. No icicles or buildup on my trees though. I sure don't want an ice storm. Late yesterday afternoon, our power blinked a couple of times and went off. It was off for about 1 hour, but we had a roaring fire in the fireplace and didn't get cold. The house held heat very well. Long power outages due to iced power lines down is a scary thought this time of year. I do have a couple of generators, but I'd prefer not to have to use them.
