I found a NEW, economical (relatively), treat at Food Lion this week.

At the deli, in the case with the other meats that they slice, they had,,,, country ham!!

We had it sliced on setting "one" (thin), and it was GREAT,, We only got a 1/4 pound, but, that is plenty, one slice at a time.

You could make a sandwich with a bun, stuff out of the garden (tomatoes, lettuce, whatever else you got) and ONE SLICE of the country ham,,

For us, only one slice is needed,, it gives all the flavor that you need,,

This time of the year garden stuff sandwiches are great,, and the slice of country ham puts it over the top!!

20 years ago, right after my divorce, I thought milk sounded good in eggs.....

I tried it and they were the worst scrambled eggs I ever had, I either add a little water or nothing other than onions now
Okay take this for what it's worth... To make a 'chef' quality omelette, use one egg and add some water to thin it, then beat it. Do not use milk. Pour it in your 10in at least pan very thin and do not let it brown. Brown is burnt.

There is a bit of an art to it and I have become somewhat obsessed in making them 'perfect'. If you are hungry make an additional 1 egg omelette. Very difficult to make 2 egg omelettes without burning them without lots of practice. One has to keep the beaten eggs moving.

I won't order them anymore at a diner or equivalent. They always overcook omelettes IMO. Okay I will stand down now :soapbox:

Home made ham salad on whole wheat toast, or a nut bread toasted and buttered

I prefer fresh chives...onions in omelets

Note, I still use milk in scrambled eggs.

Olive butter and cream cheese. They no longer make olive butter so make your own. Take salad olives (cheapest) and put in a blender after removing most of the juice. Blend till about the consistency of drywall compound:) . Spread on bread with cream cheese and eat. Picture attached. OBCC.jpg
