You Texans correct me if I'm wrong. Authentic Texas BBQ uses beef and does not use a tomato based BBQ sauce???

Sauce is pretty varied. Franklin's has two sauces, both I liked but their meat was so good I didn't put any sauce on most of whet I had.

Texas BBQ is brisket, ribs, sausage, turkey, cabrito, etc. It's not to pork like eastern BBQ.

Never will forget walking into a BBQ place in Alabama once about noon and asking for a sliced brisket sandwich and was told they were out. WHAT? A BBQ place out of brisket at half passed noon?

They said they only cook two a day. Couldn't believe it.

I love BBQ, but I don't know that I would wait 2 hours for it. Especially if it was a hot day like you Texan's had last year. Up here, we get pork for BBQ. I guess all of our cooks are from the SE.

Well, never did I, either. Today was beautiful weather and the 'line' actually has it's own interesting culture. We had a nice time visiting with the family next to us and some interesting people were there. Several college students were playing a game of four square. I took off after about the first 30 minutes and walked down the block to a coffee shop and hung out with some characters there for a while. We wound up sharing a table with the family next to us from the 'line' and overall it really didn't seem like that long at all.


They say people have actually advertised on craigslist to hold your place in line at Franklin's and want to be paid in brisket.

There's not a restaurant in the world that I'd wait two hours to get into, or even one hour for that matter, regardless of the weather.

Our kids wanted us to go with them to the Hard Eight BBQ in Coppell last June. They had been there before, but we had not. You stand in line in the heat to get your order, then can go sit either in an air-conditioned area or outside.

When I saw that line, I told them I'd go elsewhere, but they talked me into going on into the air-conditioned area and they ordered and brought the food in to me.:laughing: I can tell you that it was excellent food but I would never go there in hot weather, which eliminates enough of the year that I'll probably never go there again.

Yeah I know the Hard Eight. It's good Q. They had a location out west on I 10 around Junction I think and I also used to stop at one in Brady. Those locations may have closed it looks like.


The things I normally hate are standing in lines, valet parking charges and cover charges.

Franklin BBQ has great Q. Not just good, not just really good, not just very very good. I mean great. It was worth the line and that is a big, big concession for me.

It better be good if you had to wait 2 hours :mad:.
I think I would be in pretty bad mood after that wait, I would need a few "Lone Stars" before I ordered.
That guy must be making a fortune.

Robert, it's not cheap for sure. But it dang sure is good. They usually run out about 1pm or so. They start monitoring the 'line' at about 10:30 to get an idea of how long the meat will last based on how much people say they are going to order. Then after they start serving and start getting close to running out they will estimate where the customer is that will be the last and give him a sign that says 'last man standing'. Anybody who gets in line after that guy is on notice that there may be no more meat when they get to the counter.

It really is 'that good'.

It's time for him to expand or open another location.
All those people standing in line could be sitting and buying a cold drink rather than standing on the sidewalk.
