"Fair to Middling" was a grade of cotton. It's a "Southern Thang!"I always thought that went Fair to "Middlin" as in inbetween.

The commonly used cotton grades were something like: (as best I can recall. My grandpa was a cotton farmer, not me)

Good
Fair
Middling
Ordinary
Poor
So "Fair to Middling" was about average.
"Middling" is still a term used to grade cotton. Look at the chart on the bottom of this page: The Classification of Cotton
Wow! learned something this morning, I have heard Fair to Middling all my life, but never knew the cotton connection..
