Wheel weights are good for traction and lowering overall center of gravity but won't unweight the front wheels to help with steering or other axle loading concerns.

Ever see a small SCUT with a full bucket, lift and flip forwards. Rear weights are key to stabilize the machine in operation.

Or you can just get an MTD Cub Cadet eSteer assist unit. They are called EPS units. Some are universal enough as kits to add on now.

Do you have any quick disconnects on your loader hydraulics. If so, check them out to make sure they are plugged in all the way.

What can I do about the loader going down at a snail's pace

When I unloaded the tractor, the loader worked perfectly. I drove the tractor around for about 15 minutes and then the valve handle stuck and started acting up. Got the valve handle unstuck, but now it just moves down slow, as in like an inch in 5 seconds

Assuming that means you have no quick disconnects. Must be a control valve problem.

As far as power steering there have been many conversions done to Electric Power Steering a popular part is the 02-07 Saturn Vue unit with an aftermarket control unit, such as;

with something like this added, it can be done without this though;
