The reason that goats' milk isn't cost effective in this country, is because there aren't that many goat dairies. It's the law of supply and demand. Worldwide, more people drink goats' milk than cows' milk. In fact, worldwide, more people also drink sheep's milk than cows' milk. Worldwide milk consumption is: #1 goat's milk
#2 sheep's milk
#3 cow's milk
#4 water buffalo milk
Don't be surprised, you've probably consumed each of them if you like good cheese. Feta cheese is made with goat's milk. Romano cheese is made with sheep's milk. And REAL mozarella cheese is made with water buffalo milk.
