IIRC the Gator blade manufacturer says those "wings" don't need sharpening. They aren't there to cut - the create some kind of turbulence to pass the grass past the main cutting edges multiple times.
I've just put a set on my GR2120 54" deck. Very nice cut. I wouldn't really call it a mulching cut but maybe it will be good enough. The actual mulching kit did a much better job of fine-chopping the grass but left an ugly clumped stripe along the right edge of the deck.
The biggest problem I have with the Gators w/out the mulch kit is how far it throws the clippings. Can't keep them out of the veggies or the shrubbery. It's always something...
