I went through the same thing last summer on my 3000. Changed most of the electrical system and replaced fuel cap and still had the problem. Ended up being just a clogged fuel petcock. Should be easy to check.

Next time it dies.. pull a plug wire and see if you have spark.. if you do, then check fuel flow. The MS carbs had a bowl drain to check.. not sure about the holley carbs..

I think i'm going to try the coil. I've tried some of the other suggested fixes and nothings resolved it so far. But now I have a nice clean carb and perfect flowing fuel system. 
Is a N/H dealer the only place to get a new coil fror it? Or will an auto parts store etc. carry them as well? Is there a coil for something else that could substitute for it ? I apologize for my ignorance in this area. Thanks to thoes who are helping me I really appreciate it!

Mine started doing that crap and went down hill from there.
Coil would be the first thing. I hope that's all but of all things, my dang freeze plugs had to be replaced. Thought everything was fine. I had to spray a little starting fluid in it until it would stay running then all of a sudden water went everywhere. Three hundred in labor and 2 dollars in parts. Then the leaks started everywhere and hoses... One thing after the next. Finally broke down and bought a new one. Got tired of losing days working on the tractor instead of working on my place.
