sorry I forgot to quote but we are probably talking about the same thing they are very bitter.

Bet we are to. It does take a lot of sugar to balance out the taste. It is my favorite jelly. Last year we had a bumper crop. Weather was perfect for them. The plumbs were almost sweet right off the shrub. This year we had a late hard freeze while the plants were in bloom. Could not find a single plumb.

Good looking corn there. My dad had a good stand of corn until a severe thunderstorm with 100 mph straight-line winds came through. :(

It is peach time here too! My wife's uncle brought her fresh peaches and habanero peppers. The dark ones are spiced peach habanero jam. The lighter ones are habanero peach jam. The last one is purdy hot. :fiery:

Dirt Ditch, my wife ask me to see if you would share your spiced peach habanero jam recipe. We make quite a few of them and don't use very many. Too hot for most of her pepper jelly. I'm sending you a PM.

dirt; When sending that recipe to Larro, will you include me in that PM, as well? Thanks! Sorry if this is a repeat, as I am still on first cup of coffee, so have a few cobwebs in the brain, this morning.

Thank you. Her eyes lit up when she saw the post about the jam. We only have two plants but we make a lot of habanero.

Habaneros are heavy producers. I finally scaled back to one plant, and still have more than plenty!

The oldest I've had was about 5 yrs old. Tasted good it was home made chili sauce. My mother made it years ago before she passed away. I started canning again after I tasted that and remembered how much I missed it. Now my wife has me canning from mid August to September. My mother used to say open it up if smells good eat it.

I'm guessing that if it does smell good, it's safe. I recently read about someone in Germany that found a can of lard that was sent from the US as food aid just after WWII. The can was in good condition, and the contents were edible, if not quite the same texture as 60 years ago.
