I've shot over two dozen different types of big game animals around the world and nothing tastes better then Axis deer!!!!!

While I agree with the comments that how you take care of the meat will affect the final taste of it, there is also a huge difference in flavor of the animal based on what it eats, and where it lives. I've had whitetail from the Texas that was extremely tasty, and whitetail from Wyoming that wasn't very good at all. I've never found a mule deer that was any good at all. I've tried quite a few different ways to hide the flavor and finally just gave up and make them all into summer sausage. Elk is always good!!!! Just like our different types of game, Africa is the same. Some taste a lot better then others!!!

My hunting buddies are all big game hunters and hunt all over the world. During opening weekend, we usually have a pretty diverse game selection for dinner. Some of the best venison I've eaten is Nilgai. It has a different texture from beef, but some of the best flavor you'll find. The other year, one of my buddies won the Texas grand slam lottery and went on a desert bighorn sheep hunt, so we got to try that for dinner. We keep joking that it was the most expensive dinner any of us will have in our life. Desert Bighorn sheep tags go for about $75K at auction.

I have respect for anyone with greater and wider hunting experience than I do...but my experience has shown that what a whitetail eats has a much greater effect on the content (taste) of the fat produced and not so much the muscle tissue...

Most deer hunters know that you should remove as much of the fat as possible from the venison (unlike with beef)...However I have learned that deer that predominately feed near agricultural fields (especially crops like soy beans etc.) produce a fat that is much stronger than say a deer that feeds near apple orchards...or strictly mast crops...

With beef the flavor is all about the fat and the aging process...the same applies to venison even though venison is much leaner than beef...

I hunt. Over the years have bagged, elk, variety of deer, bear and birds. Have had some great times with friends in the field. From my perspective......getting the animal is icing on the cake......just being out there with a few buddies is what really matters.:thumbsup:

Said like a true outdoorsman :thumbsup: My boss and I had this discussion just the other day. Just seeing some wildlife makes me want to get out there more often!

I grew up in a suburban area and no one in my family or any acquaintances hunted. We had no real access or mentors to show us the rich heritage of hunting. When I was 27 my new brother in law introduced me to the sport. I have been hooked ever since. I usually take 2 to 3 deer a year and have a number of bears, foxes etc. Like others have said, I just like being in the woods with good company and seeing wildlife. Just this past Wednesday, I was in a deer stand bow hunting and had one of the best days in the woods ever. I watched as 2 does walked by, then a spike and shortly after a large 8 pt. Then a black bear came through, and 14 turkeys. When I thought it was finally over, a porcupine decided to grace me with his presence. All within 3 hrs. I was unable to get a shot at the 8 pt but it was just as satisfying to see them. I have gotten my son and a neighbor into hunting so that we can keep this sport alive. I plan on introducing my newly born ( 8 days and 11 days) grandchildren to hunting when they come of age.

Kind of like this?? My African PH and I are glassing to find a nice waterbuck in the area below us. we did this day after day and finally bagged a nice one late on the 5th day.

Regarding the water buffalo, unfortunately, the landowner tried taking one of them with his. 264, without good results. I tracked the blood trail the next morning for close to a mile and eventually ran out of time and spoor. There wasn't a big blood trail, but it was enough for me to think it would eventually be infected and fatal. I was hoping I'd be able to put him down cleanly, like it deserves, after the landowner screwed up. Unfortunately, my luck didn't prevail. I haven't talked to the landowner since, he was an interesting character, but not in a good way.:thumbdown:

I'll be at DSC on Friday, Saturday and Sunday. Probably have Shellie and the girls with me on Saturday. It's one of my favorite events all year!!

I've eaten lots of different wild game, and enjoyed most of it. Most Cajuns will eat anything that doesn't eat us first.

However, one wild game that I just could not eat was Black Bear. I was lucky enough to take a big one (about 400 lbs) in Canada in 1996. We tried cooking it all kinds of ways, but none was edible.

Eddie did you try soaking the mule deer meat in milk overnight before cooking it? It takes the "sagey" taste out of it.
